As we gear up for Easter weekend celebrations, I wanted to share an ultra-easy dish that combines just 3-ingredients and works great for brunch menus or as an impressive appetizer. One of my favorite summertime traditions is blueberry picking at the berry farm down the road. I’m instantly transported to the pages of Blueberries for Sal with each kerplunk, kerplunk! as the berries hit the bottom of our tin buckets. We picked loads of blueberries on a hot day last week and came home to hide in the shade and bake up some tasty treats with our bounty! I was craving a blueberry muffin and decided to experiment with a cake-style breakfast treat. A big hearty breakfast sandwich is the way to my heart, and I made a special, savory cheddar waffle version in partnership with EatingWell magazine for their May issue to get inspired for Mother’s Day brunches. The waffles are full of the flavorful Kerrygold Reserve Cheddar, made with milk from grass-fed cows that are raised on small, family-run Irish dairy farms. As a parent, I often feel like I’m James Bond on a secret mission. The mission, should you choose to accept it, is to do anything in your power to trick your toddler into eating vegetables. My latest sneaky-veggie-hiding spy tactic is in everyone’s favorite breakfast treat: waffles. The amazing thing about a waffle iron is you can waffle almost anything! I have been keeping some cauliflower tots in our freezer to add to Jane’s dinner plate every so often, anything dipped in ketchup is a sure bet for her. With a bunch of leftover tots on hand, I experimented with pressing them in the waffle iron and the outcome was delicious. They pressed together and resulted in a crispy, savory hashbrown-style waffle. read more

Jane’s birthday party was this past weekend and her request was for a celebration with “rainbows, sprinkles, and snacks” — all of her favorite things. When I was planning the menu I knew I wanted to incorporate some of her favorite foods, and donuts top her list of sweet treats! I’m continuing to work on my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited. The project has been going on for a few months now, and I’ve learned a lot so far — practice makes perfect! One of the biggest takeaways that I’ve had as I tackle each new step working towards my goal, is that motivation (particularly on a warm summer day!) and inspiration can be my two biggest challenges.
