Wild Rice Winter Harvest Salad.
Serves: 4 servings
  • Mixed Greens
  • 1 Cup of cooked wild rice
  • 1 Sweet potato, cubed and roasted
  • 1 Large apple, thinly sliced
  • ¼ Cup of chopped almonds
  • ¼ Cup of dried cranberries
  • 4 Tbsp of goat cheese
  • Cracked black pepper
  • Balsamic Vinaigrette
  1. Divide a handful of mixed greens across four bowls.
  2. Top each bowl with a quarter of the wild rice, roasted sweet potatoes, sliced apples, chopped almonds, dried cranberries, and goat cheese.
  3. Finish each bowl with freshly cracked black pepper, and drizzle with balsamic vinaigrette to taste.
