Baked Garlic and Herb Turkey Meatballs.
Serves: 18 Meatballs
  • 1 Lb. Ground Turkey
  • 1 Egg
  • ½ Cup of Panko Bread Crumbs
  • 3 Large Cloves of Garlic, minced
  • 1 Tbsp. Fresh Parsley, chopped
  • 1 Tbsp. of Fresh Scallions, chopped
  • 1 Tsp. of Onion Powder
  • ½ Tsp. of Dried Oregano
  • ½ Tsp. of Salt
  • ½ Tsp. of Pepper
  • Cooking spray
  1. Preheat oven to 450 degrees and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combined turkey with egg, bread crumbs, garlic, herbs and spices. Use your hands to mix everything together until just combined, and then roll into 1.5” balls (should make about 18 meatballs).
  3. Add meatballs to the lined baking sheet, and spray the tops of the meatballs with cooking spray.
  4. Bake for 25 minutes at 400 degrees, and then turn the oven to broil for 3 additional minutes to get a golden brown finish.
  5. Serve warm with red sauce over pasta, in a rice bowl with Mediterranean toppings, or on top of a salad with the dressing of your choice.
