In a large bowl, combine the cubed pieces of cornbread with the cubed crusty white bread, and pour the onion and butter mixture over the top. Toss to coat the bread.
Slowly pour the warm chicken stock over the bread mixture and stir to incorporate the liquid.
Transfer the stuffing to a baking dish and sprinkle the everything seasoning on top before baking at 400 degrees for 20 minutes.
Remove from oven and garnish with additional fresh sage.
