Pappardelle with Lemon, Asparagus and Broccolini.

Serves: 2-3 Servings
  • 1 Cup of Asparagus, chopped
  • 1 Cup of Broccolini, stems removed
  • ½ lb of Pappardelle pasta
  • 2 Tbsp. Butter
  • 2 Cloves of Garlic, minced
  • Zest of one lemon
  • ¼ cup White Wine
  • ¼ Cup of Parmesan Cheese
  • Salt and Pepper
  • 2 Tbsp. of Fresh Parsley, chopped
  • Red pepper flakes (optional)
  1. Bring a pot of well-salted water to a boil; steam asparagus and broccoli for 2 minutes then remove and set aside.
  2. Bring water back to a boil and cook pasta as directed to al dente; reserve ¼ cup of pasta water.
  3. In a sauté pan, melt butter and cook minced garlic until softened. Add zest of one lemon and white wine to the pan, cook for 3-4 minutes.
  4. Stir in reserved ¼ cup of pasta water then add the cooked pasta to the pan and toss with Parmesan cheese, steamed vegetables and season with salt and black pepper.
  5. Top with fresh chopped parsley and red pepper flakes (optional) before serving.
