In a small saucepan, combine the peeled and sliced pear pieces, sugar, cinnamon sticks, and water. Simmer for about 30 minutes, until the liquid has thickened and reduced, and the pears are softened. Transfer to a large pitcher and chill for at least an hour, or overnight.
Add bourbon, pear juice, and ginger beer to the pitcher and stir to combine with the cinnamon-pear syrup.
Pour over ice into glasses to serve; optional: garnish with additional fresh cinnamon sticks.
