Strawberry Thyme Shrub Cocktail.
 
Ingredients
  • 1 Cup of Strawberries, chopped
  • 1 Cup of Apple Cider Vinegar
  • 1 Cup of Sugar
  • Fresh Thyme Sprigs
  • Prosecco
  • Fresh Strawberries, for garnish
Instructions
  1. In a glass jar, gently mash strawberries and sugar together with a fork. Pour vinegar on top and add a few fresh thyme sprigs and stir to combine. Seal jar and let mixture sit at room temperature for about 1 day, until the sugar is mostly dissolved.
  2. After a day, strain the mixture in a fine mesh sieve and press to remove all of the juices from the strawberries. Discard the strawberry pulp and thyme sprigs, and transfer the strained mixture back into the jar. Seal and keep chilled for another 3-4 days until it's ready to use.
  3. When ready to serve, add about ½ oz of the shrub to a glass and top with chilled Prosecco. Garnish with fresh thyme sprigs and more strawberries.
