The team at Martha Stewart Living sent me a little care package this month with a challenge! The December issue features some amazing pasta dishes with just 5 ingredients, making them perfect weeknight meals (which is so crucial during this busy time of year!). Armed with a box of Barilla® Rigatoni, their new issue for inspiration, and a cute new serving bowl from the Martha Stewart Whim Collection, I was challenged to create my own 5-ingredient pasta dish. Loving the fall flavors of a brown butter sauce and sweet seasonal squash, I narrowed down my five ingredients to butter, Parmesan cheese, sage, walnuts and butternut squash (plus some salt and pepper!). Leftover from my early-pregnancy period of morning sickness is a bit of a distaste for vegetables at the moment. I’m trying my best to eat healthy, but sneaking in veggies has been a challenge. So I’ve been trying hard to find any flavors of vegetable that sounds moderately appealing to me, and go full-force packing those into my diet. Butternut Squash has such a sweetness to it, that I can almost trick myself into thinking it’s less veggie and more like a treat! This weekend I experimented with a homemade hearty butternut squash soup packed with tons of vegetables and autumnal flavors. I hid a few carrots in there, and an apple and shallots for even more flavor. Some salty roasted pepitas and crusty bread make it a perfect chilly fall day meal! Full recipe below:

Countdown to Turkey Day is on! I cannot wait to eat all.the.stuffing. I’m not ashamed to admit it, I love the junky, classic, out-of-the-box stuffing. But one can never have enough stuffing, so I’ve been experimenting with some new recipes for this delectable, carb-y side dish. This recipe uses brioche which gives it a light and fluffy texture, and it has tons of flavor from the maple roasted squash and onions. Plus a little fresh sage adds that seasonal flavor that makes it just taste like Thanksgiving.
