Mixing up another one of my #DomestikateHappyHour cocktails to kick off the weekend! This raspberry lime vodka soda takes inspiration from my favorite raspberry seltzer at Flour Bakery in Boston. I had it recently and was like, dang, this would make a great cocktail. Prep the raspberry syrup ahead of time and chill it down before mixing it with vodka, soda and a squeeze of lime! (And because I know you’ll ask, the vanilla-infused sugar in the syrup is an important flavor, it gives it a really unique, robust flavor – you can buy it here). Scroll down for the recipe.
Raspberry Lime Vodka Soda.
Ingredients
- 1 Cup fresh or frozen raspberries
- 1 Cup vanilla sugar
- 2 Tablespoon freshly squeezed lemon juice
- 1 Tablespoon freshly squeezed lime juice
- Vodka
- Soda Water
- Fresh limes, for garnish
Instructions
- In a small saucepan, combine the raspberries, vanilla sugar, and 1 cup water and bring to a boil over high heat, stirring until the sugar has dissolved.
- Remove from the heat and strain through the sieve placed over a small bowl to remove most of the raspberry seeds. Add the lemon and lime juices to the raspberry syrup and stir to combine.
- Chill the syrup before using.
- For each drink, pour 2 tablespoons syrup and 1.5 oz of vodka into a tall glass filled with ice. Top with soda water, and garnish with fresh lime slices before serving.
