I’ll the first to admit that this isn’t the prettiest dish I’ve ever shared on my page, but it hits a sweet spot for all of the things we love: a tasty and healthy dinner, with less than 10 ingredients, on the table in under 30 minutes, and you can make it all on one pan! The salmon gets coated in a simple maple-dijon glaze and served alongside crispy seasonal Brussels sprouts, potatoes and shallots (a little extra maple-dijon marinade gets sprinkled on the veggie for even more flavor!). It’s a quick dish for those busy weeknights when we want something home cooked without the hassle!
Sheet Pan Maple Dijon Salmon, Potatoes and Brussels Sprouts.

Ingredients
- 1 lb. Salmon
- ¼ lb. of New Potatoes, roughly chopped
- ¼ lb. of Brussels Sprouts, trimmed
- 1 Large Shallot, quartered
- 2 Tbsp Grainy Mustard
- 1 Tsp Maple Syrup
- 1 Garlic Clove, minced
- Olive Oil
- Salt and Pepper
Instructions
- Preheat oven to 400 degrees.
- On a rimmed baking sheet, arrange the chopped potatoes, brussels sprouts, shallot, and salmon. Drizzle everything lightly with olive oil and season with salt and pepper.
- Mix the grainy mustard, maple syrup and minced garlic in a small bowl; spread ¾ of the mixture onto the salmon and drizzle the remaining over the potatoes and brussels sprouts.
- Roast the ingredients in the oven for 20 to 22 minutes, until salmon reaches desired doneness and potatoes and brussels sprouts have crisped. Serve immediately.
