I’ll the first to admit that this isn’t the prettiest dish I’ve ever shared on my page, but it hits a sweet spot for all of the things we love: a tasty and healthy dinner, with less than 10 ingredients, on the table in under 30 minutes, and you can make it all on one pan! The salmon gets coated in a simple maple-dijon glaze and served alongside crispy seasonal Brussels sprouts, potatoes and shallots (a little extra maple-dijon marinade gets sprinkled on the veggie for even more flavor!). It’s a quick dish for those busy weeknights when we want something home cooked without the hassle!

Sheet Pan Maple Dijon Salmon, Potatoes and Brussels Sprouts.

Ingredients
  • 1 lb. Salmon
  • ¼ lb. of New Potatoes, roughly chopped
  • ¼ lb. of Brussels Sprouts, trimmed
  • 1 Large Shallot, quartered
  • 2 Tbsp Grainy Mustard
  • 1 Tsp Maple Syrup
  • 1 Garlic Clove, minced
  • Olive Oil
  • Salt and Pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. On a rimmed baking sheet, arrange the chopped potatoes, brussels sprouts, shallot, and salmon. Drizzle everything lightly with olive oil and season with salt and pepper.
  3. Mix the grainy mustard, maple syrup and minced garlic in a small bowl; spread ¾ of the mixture onto the salmon and drizzle the remaining over the potatoes and brussels sprouts.
  4. Roast the ingredients in the oven for 20 to 22 minutes, until salmon reaches desired doneness and potatoes and brussels sprouts have crisped. Serve immediately.
