Cheddar Chive Popovers.

Ingredients
  

  • 3 1/2 cups milk
  • 4 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 6 large eggs room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons minced fresh chives

Instructions
 

  • Warm milk over low heat in a saucepan until it is warm to the touch.
  • Sift flour, baking powder, and salt together in a large mixing bowl.
  • Crack eggs into a large bowl and beat with an electric mixer for 3–4 minutes, until they become foamy.Add the warm milk to the foamy eggs and continue to beat the mixture.
  • Gradually add the dry ingredients to the wet ingredients and continue to beat for about 2 minutes. Let batter rest in the bowl at room temperature for 40–60 minutes for best results.
  • Preheat oven to 450°F and coat a popover pan with nonstick spray.
  • Combine shredded sharp cheddar cheese and parsley and chives; set aside.
  • Put the pan in the oven for about two minutes to warm up before filling the cups three-quarters full with the rested batter. Top each cup with a sprinkle of the shredded cheddar cheese and herbs.
  • Bake at 450°F for 15 minutes. Turn oven down to 375°F and bake for 30 minutes longer, until popovers are risen and golden brown. *Do not open the oven during the cooking process*
  • Remove the popovers from the oven and transfer them to a wire cooling rack to rest for a few minutes before serving.
