Mexican Lasagna.

Ingredients
  

  • 1 Lb of ground turkey or beef
  • 1 Tsp each of onion powder cumin, and chili powder
  • 1 Can of red enchilada sauce divided
  • 1 Cup of sharp cheddar cheese divided
  • 1 Cup of pepperjack cheese divided
  • 1 Egg
  • 1/2 Cup of ricotta cheese
  • 1/2 Cup of refried beans
  • 5-6 Tortillas

Instructions
 

  • In a large skillet, season turkey or beef with onion powder, cumin, chili powder and salt and pepper. Brown the meat until cooked through, drain excess fat, and mix with 1/2 cup of enchilada sauce.
  • While meat is cooking, in a bowl combine 1/2 cup of cheddar cheese, 1/2 cup of pepperjack cheese, egg and ricotta cheese.
  • Using a pie dish, add a tortilla for the base layer of the Mexican Lasagna and cover with refried beans and a drizzle of enchilada sauce.
  • Add a tortilla on top of that layer and cover with half of the browned meat, add an additional layer and spread half of the ricotta and cheese mixture.
  • Continue to alternate tortillas with layers of refried beans and enchilada sauce, meat, and the cheese mixture.
  • Add one final tortilla on top and spread a light layer of enchilada sauce on top and cover with the remaining cup of cheese.
  • Bake at 350 for 20-25 minutes until bubbly and hot. Broil for the last 1-2 minutes.
  • Serve slice with extra salsa, sour cream, and freshly chopped scallions.
