To make the strawberry simple syrup, combine 1.5 cups of water, 1 cup of chopped fresh strawberries and 3 tbsp. of sugar in a small saucepan. Simmer for 10-15 minutes, until the syrup has reduced by about half. Use a whisk or fork to mash the strawberries until broken down into smaller pieces and then remove from the heat and transfer to a container to cool in the fridge for at least one hour. The simple syrup should make 8-10 drinks.
