I am easing into the week after an amazing weekend away. I spent a few days in Chatham with my four best girlfriends for what we dubbed as our “first annual” gals getaway weekend. We had the best time relaxing, enjoying the sunshine, and more than anything: EATING! It was a snackstravanza all weekend long. I packed up a little travel cheese plate to bring along with me for the weekend so we could have some pre-dinner snacks on our airBnB’s pretty porch. Whenever I head away for a quick trip and have access to a fridge I like to pull together a version of this “traveling cheeseboard” with a few favorite essentials, like cheese, charcuterie, berries, and a crunchy accompaniment like GOOD THiNS!GOOD THiNS are a tasty snack that are perfect for this type of on-the-go snacking. They come in a few gluten-free varieties, and are made with no artificial colors, flavors, or high fructose corn syrup. I enjoy the GOOD THiNS Veggie Blend and The Corn One with Sea Salt for their flavor, and more than anything because they have a great texture that pairs really well with some of my favorite cheeses like a soft creamy brie or cambozola. There is nothing better to me than a good cheese plate with some sweet and savory snacks; it’s my favorite way to kick back and unwind. We even made a stop at a local cheese shop to restock for our second night and got some amazing cheeses and fig spread to pair with our other ingredients and snacks. Add a little sunshine to the mix and it was pure bliss, just what the doctor ordered! Oooh! Wish I had emailed you sooner that the Eldredge Public Library in downtown Chatham has a cookbook review group called “Reading in the Kitchen” and your cookbook, “New England Invite,” is the cookbook we’ll be cooking from on Tues., June 4th! Glad you and your friends had a good time in Chatham. You’ll have to stop by the library next time you’re in town : )
