I have been working on my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited for several months now, and I’m winding down the official challenge but still baking away! This month I decided to tackle an apple pie, for a few reasons. First, I used my cash back credit card to stock up on the most beautiful, seasonal farm stand apples and I needed to make something with them! And second, apple pie is one of the few baked goods that I always felt really comfortable baking. I took on one of my hardest projects yet in my most recent bake for my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited! Croissants have been on my to-bake list for ages; they’re one of my favorite French pastries but have always felt way too challenging to manage making at home. I started to feel a bit more confident after some of my bread baking and pretzel-making experiments, and a laminated dough felt like the most logical next step to continue to challenge myself. read more

I’m continuing to work on my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited. The project has been going on for a few months now, and I’ve learned a lot so far — practice makes perfect! One of the biggest takeaways that I’ve had as I tackle each new step working towards my goal, is that motivation (particularly on a warm summer day!) and inspiration can be my two biggest challenges. I’m making some progress on my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited, and I have been digging into a baking area that I was really excited to tackle: bread! Oh gosh, I love bread, and fresh baked bread is just about the best thing on earth. I have been determined to master a go-to recipe in the bread category that I can make when we have guests over for a meal, because a good crusty loaf is the perfect accompaniment to most dishes and summer desserts. read more

I’m checking in today on my “be a better baker challenge” in collaboration with my friends at Chase Freedom Unlimited, and this week I tackled summer desserts: mini angel food cakes with berries and whipped cream. I find one of the issues I’m facing with this baking challenge is finding the motivation to take on complicated recipes. In cooking, I’m always looking for smart shortcuts to save time, cut down on dishes, and get delicious healthy food on the table fast. One of the very cool parts about my job is that I get to work with brands that I love to create very cool content. I’ve always been someone who gets hyped over the new year. I love a fresh start, I love clean to do lists, I love resetting goals and the whole clean-slate thing. It usually gives me so much energy and momentum, but man this year has not been that way! I have been sick, Jane has been sick, we’ve been operating in a cloud of sinus infections, ear infections, and general exhaustion. I even had to cancel plans on my birthday so I was in a reallll cranky spot! Over the weekend I rallied for a girls night out with my best friends’ and today is the first day since the start of 2020 that I’ve felt like I can breathe (literally and figuratively, ha). So I’m trying to get back in the game — a little bit slower in my start than I anticipated — but with lots to share. read more
