We go big for St. Patrick’s Day around here – between school celebrations and our town’s local St. Patrick’s Day parade – there are lots of reasons to get festive about our Irish heritage. I’m always looking for creative ways to celebrate and was excited to see all the cookie varieties that my friends at Fancypants Baking Co are baking this season for perfectly themed holiday sweets. I made a festive St. Patrick’s Day Cookie Board with all the tasty treats!To assemble the board, I used tiny upcycled Chocolate Chip Cookies to create a cookie border around the plate. Fancypants Baking Co makes these upcycled cookies with ingredients that that otherwise would be wasted (like the nutritious pulp left over from tofu and soymilk production, the husk of the coffee bean, and the pulp leftover from oat milk production – it sounds weird but they’re DELICIOUS!).I filled in the center of the board with alternating cookie flavors – seasonal Irish Cream Cookies and decorated shamrock cookies. All the Fancypants Baking Co cookies are made in a peanut and tree-nut free facility so they’re a great choice for entertaining and school activities! On top of being allergy friendly, they’re made with fresh, wholesome, mindfully sourced ingredients, and all of the icing is dyed naturally with colors from fruits and vegetables.I finished off the board with some of the bigger decorated shamrock and emoji cookies (these are a big hit with the kids) and tucked in a few “pot of gold” chocolate coins for a festive touch.
