My favorite way to use Thanksgiving leftovers is this tasty, savory, layered pie with all of the best holiday flavors packed inside. It’s usually a fun way to reimagine the aftermath of the big feast, filling a pie crust with layers of stuffing, mashed potatoes, gravy, turkey and cranberry sauce. This year, I thought I’d make it before Thanksgiving with the help of some of my favorite Trader Joe’s shortcuts — I grabbed frozen pie dough and mashed potatoes, jars of gravy and cranberry sauce, and a box of their cornbread stuffing mix — those quick little Trader Joe’s hacks made for quick work of assembling this recipe. It would be a perfect dish to bring to a Friendsgiving celebration! Get the recipe below:

A Layered Thanksgiving Leftovers Pie.
 
Ingredients
  • Pre-made Pie Crusts
  • 1 Cup of leftover Stuffing
  • 1 Cup of leftover Mashed Potatoes
  • ¼ Cup Brown Gravy, plus extra for serving
  • 1 Cup of leftover Turkey or Rotisserie Chicken
  • ¼ Cup of Cranberry Sauce
Instructions
  1. Preheat the oven to 350 Degrees.
  2. Roll out half of the pie dough in a 9” rimmed pie dish.
  3. Fill the bottom of the dish with a layer of leftover stuffing, then a layer of mashed potatoes. Drizzle the gravy over the potatoes and top with shredded turkey or chicken.
  4. Top with with cranberry sauce and use the remaining pie dough to close the pie, pinching the edges and slicing a few steam holes in the top.
  5. Bake for at 350 degrees for 25-35 minutes, until the crust is golden brown. Serve hot with extra gravy.
