I tend to hit a cooking slump during this time of the summer. It has been terribly hot the past few days and I glance over to look at the stove like it’s going to bite me if I turn it on. Instead of phoning it in though (literally, I considered phoning in a pizza), I’ve been trying to take this heat wave as a cooking challenge — can I create tasty treats that also keep me cool? That’s where this idea came in! I took the elements of a nice chilled antipasto plate and made them into dippable skewers, laced with some chilled provolone, tortellini, tomatoes and olives. I made my own pesto for the dipping sauce (I just throw in garlic, basil, pine nuts and olive oil and keep adding until the consistency looks right) — try Ina Garten’s recipe if you like to be exact with proportions! We’re coming up on one of my favorite excuses to consume excessive amounts of margaritas and Mexican food, Cinco de Mayo! To get in the holiday spirit I decided to play around with some nacho recipes (It’s a tough job people, but someone has to do it!). I really like the idea of nachos being a full meal, because I usually feel just full enough after eating them that I don’t really want an entree (but then I’m like, did I really just eat a bowl of cheesy chips for dinner?). My solution: add the full meal to the bowl of chips! I stepped out to our new grill (my current favorite toy) and grilled up some skirt steak, corn, and baby peppers. Everywhere you look there’s a girl instagramming her avocado toast. I’ve seen more avocado toast on the internet than macarons lately, and that’s really saying something. So I start this post with a disclaimer, this isn’t an avocado toast, it’s California Bruschetta. So very different, right? I was going to call these mini-avocado toasts, but my husband walked in to scoop one off the tray mid-click of my camera shutter and asked — “what is this? I waited to pick my dip recipes until after I saw what all of the other guests were bringing to the dip-potluck party so I could fill-in-the-blanks with some recipes that would be a little different. We had one avocado-yogurt dip that was close to guacamole, but no one had jumped on a salsa or a Mexican dip so I took that category as inspiration and got brainstorming. I knew I wanted to update the Mexican dip category so I mentally scrolled through the menu items at my favorite Mexican joint and we always order a side of Mexican Street Corn (because, hello, delicious). Taking the corn off the cob and adding in a bit more lime juice and it was simple enough to translate that dish into a sweet and spicy Mexican Street Corn dip. The recipe is easy, and I know will taste great in warmer months when we can get fresh local corn and char it on the grill, but cooking in a skillet did the trick too. It tastes great with tortilla chips; I paired it with Food Should Taste Good jalapeño chips because the subtle spice is a nice kick to complement the cool flavors of the corn and cotija cheese (plus they’re gluten free and all-natural, everybody wins!). This dip is definitely going to be a summer-time favorite, and a great warm-weather swap out for a classic Mexican dip. Full recipe below:

One of my favorite Sunday nights of the year is rolling in at the end of this month: Oscars Night! I’ve been thinking through my snack options, drink recipes, and Oscar party details and my friends at Scratch.com offered to help with some of the leg work in pulling ideas together. I used pipcorn kernels and tossed them with a caramel glaze, sea salt and rosemary, and I don’t mean to brag but this stuff is GOOD. Like, I had to throw the leftovers in the trash AND then throw more garbage on top because I couldn’t stop eating it. I’m not proud to admit that, but it’s so addictive, I had to warn you. I said to my husband this weekend, “Well at least now that the Patriot’s aren’t in the SuperBowl, it’ll just be easier to relax and enjoy the snacks, and not be stressed out about them winning” — word of advice: don’t say this to a still-grieving Patriot’s fan. The truth is that regardless of the outcome, I never would have been stressed about the game, and would have been 100% focused on the snacks, because I’m a girl with priorities. In preparation for the big game, I tackled a spin on one of my favorite party-food staples: onion dip! I made my own and used caramelized shallots and leeks in lieu of the traditional onion flavor, topped with tons of fresh herbs and served with flavorful Food Should Taste Good Blue Corn Tortilla Chips (which are all-natural and gluten-free, so it’s like I’ve helped you make a healthy SuperBowl snack, right?). When I’m gathering snacks for a lazy Sunday at home I’ve tossed that pre-made pub cheese in my shopping basket on a few occasions, and it occurred to me how simple the stuff would be to make on my own with some fun mix-ins to create new flavors. I worked with Hidden Valley Ranch and Family Circle Magazine on a homemade version of pub cheese in the February issue on stands now, made with lots of sharp cheddar cheese and cream cheese. Fresh chives and Hidden Valley Ranch dip mix give the spreadable cheese dip a bright and tangy flavor that pairs well with rustic crackers and other game-day snacks. I’ve got a recipe for you today that’s a little bit cheesy, a little bit spicy, and is served in a crispy, carb-y, delicious bread bowl made from La Brea Bakery’s jalapeño cheddar bread. So you know, you’re welcome. The bread itself was the inspiration for the recipe, jalapeño and cheddar are a winning combination in my book! I used those flavors to update a classic baked spinach dip for a savory appetizer with a little bit of a kick. And if you’re not ready for a piping-hot dip just yet, you can refrigerate it and serve it cold too, I tested it both ways and they’re equally delicious. Recipe below!

Come football play-off season the pressure is really on for me. I’m not talking about being nervous or worked up about the actual games, I’m talking about intensely brainstorming game-day snack ideas. While everyone else is preparing their picks for the big game, I’m busy concocting up ideas for what I plan to stuff my face with. And good news: I have a buttery, carb-y, pepperoni-stuffed plan, my friends! When I hit a mental block thinking about what to bring to a football viewing party last weekend my husband offered me some sage advice. He said: ‘you usually do well by taking something big and tasty and turning it into a bite sized snack’ – of course! So I shrunk down my favorite flavors in pizzas and garlic breads into a super easy Pepperoni-Stuffed Garlic Knot bite. Ingredients

  • Store-bought pizza dough
  • Pepperoni
  • Shredded mozzarella cheese
  • 4 Tbsp of butter
  • 1/4 cup of parsley leaves
  • 8-10 cloves of garlic

Instructions

  • Pre-heat oven to 375 degrees.
  • Pull or cut 1″ round pieces of pizza dough and use your fingers to roll into a 1 to 2″ disc. Top the disc with a piece of pepperoni and a sprinkle of mozzarella cheese.
  • Roll the sides of the dough over the pepperoni and cheese filling and pinch the dough closed to seal it inside. Roll dough around in between your hands to round the shape and ensure the dough is fully sealed. Repeat until all of the dough is used up and arrange the dough balls into a pie dish.
  • In a food processor, combine butter, parsley and garlic. Spread the garlic herb butter over the dough, making sure that the mixture is evenly dispersed.
  • Bake in the oven for 20-25 minutes until the garlic knots just begin to turn gold brown.  Serve with a side of marinara sauce for dipping.
