Let me tell you about the refreshing spring cocktail I’ve been enjoying on repeat lately! I set out to make a Negroni a few weeks ago, only to realize I was out of Campari. After some research on Negroni variations, I came across a recipe for The Contessa, which swaps Campari for and orangey Aperol and dry vermouth for sweet in the classic Negroni. I have been making a riff on this, garnished with orange slices and topped with soda water (orange seltzer works too!) as my weekend treat. The bright colors and fragrant citrus make it such a nice drink for spring and summer months — get the full recipe below: 

Contessa Spritz Cocktail.
Serves: 2 Drinks
 
Ingredients
  • 2 oz. Aperol
  • 2 oz. dry vermouth
  • 2 oz. gin (I love Barr Hill)
  • Soda water
  • Orange Slices
Instructions
  1. Combine Aperol, dry vermouth, and gin over ice in a cocktail shaker.
  2. Shake well, strain and divide into two glasses.
  3. Top with soda water and garnish with large orange slices.
