This Rhubarb Jalapeno Margarita is my ideal cocktail for those first warm summer nights, with sweet and jammy notes from the rhubarb, balanced with the tart lime citrus and just a kick of spice from the jalapeno that I add to the cocktail shaker. Rhubarb Jalapeno Margarita.
 
Ingredients
  • 4 cups of chopped fresh rhubarb
  • 1 cup sugar
  • 1 cup water
  • -
  • 2 oz. of Silver Tequila
  • ½ oz. of Triple Sec
  • 1 oz. of Freshly squeezed lime juice
  • ¾ oz. of Rhubarb Syrup
  • 2 Jalapeno pepper slices
  • Ice
  • Rimming salt, optional
  • Jalapeno and lime slices, for garnish
Instructions
  1. Combine rhubarb, sugar and water in a small saucepan and simmer until the rhubarb is softened and sugar has dissolved, about 10 minutes. Strain out the rhubarb and discard. Transfer syrup to an airtight container and chill until ready to use.
  2. To make the margarita, combine tequila, triple sec, lime juice, rhubarb syrup and 2 jalapeno slices in a cocktail shaker over ice. Shake vigorously and then strain into an ice filled glass with rimmed with salt (optional) and garnish with additional jalapeño and lime slices.
