Beach days are in full swing in our little coastal town! After living by the ocean for the past 5 years, I like to think that I’ve gotten my beach-packing process down to a science. One of my best tricks for packing up for a long day in the sand is making tasty wrap sandwiches that transport easily and hold up well in a cooler. I thought I’d share a few of my favorite combinations, all made with fresh, crisp Little Leaf Farms Lettuce, to help inspire your next beach day lunch!My favorite beach day wrap is a classic BLT! I use a large burrito style wrap and layer in an aioli (mayonnaise with herbs from my garden), crisp green lettuce, cooked and chilled bacon, and sliced of tomatoes. Make sure the bacon has fully cooled and chilled before adding it to the wrap to prevent the veggies from wilting, and let the sliced tomatoes rest on a paper towel for a few minutes before adding them to the mix to also prevent sogginess.
Another easy make-ahead wrap idea is a chicken salad. I have a tarragon curry chicken salad recipe that I make all the time, it’s a great way to use up leftover rotisserie or grilled chicken from a dinner the night before. This recipe gets even more flavorful after marinating together for a while, so it’s a great to make it in big batches and eat all week long.For a vegetarian option I like to roast chickpeas with a little bit of seasoning (salt, pepper, onion and garlic powder) and olive oil – about 425 for 15-20 minutes. Let them cool completely and add them to a wrap with your favorite hummus, slices of red onion, carrots, cucumbers and a big heap of crispy, green Little Leaf Farms lettuce. I made all three of these wraps last week and these vegetarian ones were a favorite! This option is also great for a very hot day because they’re dairy-free.For all of these wraps I’ve used Little Leaf Farms lettuce. I’m a big fan of the company’s sustainable growing practices and the greens are just so tasty. The Little Leaf Farms greens keep that crisp crunch since they’re so fresh, making them ideal for make-ahead-wraps like these! Here is my last trick for easy wrap sandwich transporting – clean and dry out the plastic lettuce container and use it to store the wraps in your cooler. I cut my wraps in half to make them into smaller portions for a quick bite (when you’re running after kids on the beach, finishing  half a sandwich without interruption is really a lofty goal!). Line up the wraps upright and snap the lettuce container lid on before storing it in the cooler. They work really well since they’re lightweight and easily stackable.
