I feel like January has been a bit of a struggle for just about everyone I know. It can be hard to find your rhythm again after the holidays and the quiet days around the New Year. On top of that, I find that parenting toddlers during cold winter weather is about 100x harder than warmer months – we have been cooped up, and I’ve just about run out of play-doh. By the time bedtime rolls around I’m ready for a vacation. Tropical getaways aren’t in the cards for me this week, so my solution for resetting is a little bit of hygee and indulgence after she goes to bed. I’ve been curling up with a good book under a warm fluffy blanket and having a little sweet treat to take the edge off a crazy day. We’re in the thick of holiday season, and today we have one more holiday to celebrate: National Cake Day! My blogger buddy Melissa of Lulu the Baker alerted me to this delightful (definitely made-up) holiday, and we decided to celebrate with a little cake-swap! I always find when I make a dessert “mini” sized that people are more likely to grab a bite – and these cheddar apple hand pies are no exception. They’re a bite-sized take on the traditional apple pie with just a few adjustments to make them feel exciting and new. We had some friends over for a very small, casual BBQ. It was a last minute get together, and I didn’t want to spend a ton of time in the kitchen since it’s been so very hot out lately. I made a few quick side dishes, my husband was in charge of smoking a brisket on the grill outside, and all that was left to think about was dessert. Given the soaring high temperatures, I decided to get some ice cream from our favorite spot (Hornstra Farm if you’re local!), and ice cream cones for serving. Jane is very into ice cream cones right now — she is fascinated by being able to both hold the cone and eat it. I get her fascination — what a wonderful, practical, and delicious invention! I decided since it was a special occasion that I would jazz the cones up a bit and dunk them in chocolate and sprinkles.  read more

Memorial Day is coming up next weekend, and I’ve been thinking about all of my favorite summer BBQ recipes to break out for some grilling and al fresco celebrations. It’s also the perfect time to test a few new recipes too, and one of the ideas I’ve been cooking up takes no actual cooking at all! I made these mini berry mascarpone cakes, and didn’t even have to turn on my oven. Want to know the secret to this magical 15-minute no-bake dessert? A few store-bought ingredients! I used a pre-made pound cake and cut it into little cake rounds, then topped it with a sweetened mascarpone and lemon spread. Fresh berries give the dessert tons of patriotic color and sweet seasonal flavor. Just a little dusting of sugar on top and it is ready to serve. It comes together in just minutes, and can even be prepped a few hours in advance and chilled before your guests arrive. Last week I had a few gals over for a Valentine’s Day craft-session and some cocktails. It was on a Monday night after dinner, so I just had a cheeseboard out to nibble on and decided we needed something deliciously indulgent and sweet for the Valentine’s Day theme. I’ve been toying around with an “everything-but-the-kitchen-sink” cookie recipe idea for awhile, and thought this was the perfect occasion to make them with a Valentine’s Day twist. The cookie recipe has all of the basics elements of a big gooey chocolate chip cookie, but takes it to the next level with a variety of delicious mix-ins. I put toffee bits, crushed pretzels, dark chocolate morsels, and a few different kinds of seasonal M&Ms inside these. You could easily swap in nuts, caramel chips, any kind of chopped up candy bar or chocolate. They were good, like, I had to hide them from myself and my family (mostly Jane) level-good.
