Anyone that knows me well knows that I am a sandwich fiend. I love a good deli sandwich; it’s one of my very favorite things to eat. Admittedly, the deli selection in this part of the state is dismal, and pales in comparison to the amazing delis I grew up with in New York. We are on a household mission this month to eat healthier. A really big part of our plan is to cut down on carbs. It’s so very hard since I literally think about pasta and pizza and croissants and bagels constantly throughout the day. Instead of thinking about this healthier low-carb eating plan as a diet where I can’t have the things I want, I’m trying really hard to think of all of the delicious recipes that I can have so there is something to look forward to. I’ve been digging through Pinterest, tearing out healthy ideas from resolution-fueled January issues of my favorite magazines, and brainstorming like crazy to concoct new recipes with a better-for-you twist. I’ll admit, healthy recipes have never been a focus on this blog (I mean, I posted about BBQ chip crusted mac and cheese and three ideas for loaded potato skins earlier in the week), but I really am trying to turn a new leaf and give it a try. read more

At the very end of the year, I took an informal survey on my Instagram page. I asked what exactly my followers wanted to see more of on the blog, and there was an overwhelmingly large response for easy weeknight dinners and meal prepping ideas. I previously wrote a big post about how we plan our meals out for the week to help us stay on budget, reduce food waste, and most of all, hopefully eat a little healthier. If food is pre-made in the fridge for lunches, or if I have a clear plan of what is on the menu for dinner each night, we make much better food choices and cut down on my frenzied panics about what we’re going to eat. read more

I think that post-holiday brain must be a real medical condition, because I totally have it. I’m on a constant mission to reduce food waste in our house and use up ingredients we have on hand in the fridge when I’m meal-planning. This week, we had leftover roasted chicken in the fridge and I thought about how tasty it would be with some pasta, brussels sprouts, and a squeeze of lemon juice. YUM. I started jotting the recipe idea down and got to cooking. When the meal was ready I moved it over to the window to take a few pictures so that I could share here on the blog. Then I dished it up into a few small bowls for us to eat for lunch. As I took the first tasty bite, it occurred to me: I never put the chicken in the pan! Thanksgiving is one of my favorite holidays, because it’s all about two of my most loved things: family and food. The actual Thanksgiving dinner is such a treat, but to be honest, I love the leftovers the day after (who am I kidding, sometimes that evening!) even more. Thanksgiving is just around the corner and I’m so excited for stuffing and mashed potatoes and green bean casserole and family and football! Did you notice I didn’t say turkey? It’s funny how this giant bird is the centerpiece of Thanksgiving dinner, but truthfully, it’s not my favorite part of the meal – I’ll take the side dishes over the bird any day! I am continuing on my mission to create to tasty recipes that are toddler-approved, while still being enjoyable for the adults at the table too. Jane, like most kids (and adults), is a big fan of macaroni and cheese. I recently made my classic homemade macaroni and cheese recipe, and stirred in some leftover butternut squash pieces and a few dashes of cinnamon while the pasta and cheese were still piping hot. The butternut squash melted into the sauce and created a sweet, seasonal spin on my favorite pasta dish. It was such a hit that I made it again for a family party this weekend, and it was a hit with both the kids and the grown-ups at the party. read more

If I scan a restaurant menu and see anything, I mean anything, that has a brown butter sauce poured over it then I stop right there and close the menu — I know what I’ll be ordering. What is brown butter? Essentially it’s just butter that is cooked over medium-high heat until browned and foamy, which brings out the sweet and savory flavors and tastes delicious drizzled over pasta and seafood and steak. I decided to take this tasty technique and give it an autumnal spin for an easy weeknight dinner: Brown Butter Pumpkin Ravioli.

Dinnertime can be a challenge on a good day, but add an infant or a toddler to the mix and it can be down right exhausting. Our daughter is 8 months old and diving head first into the world of solid foods right now. More than anything, she always wants to be eating what my husband and I are eating, which is great, as long as we’re eating something that’s appropriate for a toothless baby. read more
