One last snow day calls for some savory, indulgent comfort food, am I right? I have been craving sweet potatoes lately and decided to mix up my usual method of baking them into crispy fries and try something new. Enter my twice baked buffalo blue sweet potatoes. After baking sweet potatoes in the oven for almost an hour, I scooped out the center and mixed in blue cheese, scallions, butter and hot sauce to incorporate all of my favorite elements of Buffalo chicken. Then I filled the potato skins back up with the mixture and baked them off with more blue cheese on top to melt in the flavors. A few more scallions and some sour cream were added on top for a true twice-baked potato experience! Get the full recipe below:  read more

Post-baby we have been so lucky to have friends and family dropping by with sweet treats and delicious, hearty freezer meals. Though, after almost a month of eating homemade cookies and cheesy baked pastas like it was our job, the indulgent eating is starting to catch up to us and I’m realizing we need to get back onto a healthy kick. One of the best ways for us to get into a healthier routine is to plan out our meals ahead and have everything prepped in the fridge — otherwise I grab whatever snack is easy to pop-in my mouth with my free non-baby-holding hand! I decided to make some hearty winter-flavor inspired salads, with everything pre-portioned out for easy to grab lunches. read more

Guys! We’re one week out from my very favorite holiday (because it’s all about food and family, my two favorite things!). Being as food obsessed as I am, I’m already thinking about delicious leftovers. The day after Thanksgiving at my family’s house is usually a continuation of the festivities, we dig into leftovers and friends and family pops in to visit. Of course no one would turn down a post-Thanksgiving leftover turkey sandwich, but I thought I would mix it up this year and try to repurpose some leftover side dishes to make a festive appetizer to enjoy while family is still visiting at the end of the holiday weekend. Leftover mashed potatoes, stuffing, and sweet potatoes got a little dressed up and repurposed as filling for stuffed mushrooms — the taste of Thanksgiving in a bite sized snack! Full recipe below.

I’m super lucky to work so close to Flour Bakery — when I go there for lunch, which is often, I tend stick to the same order each time. This week though, a quiche on their weekly specials board caught my eye: sweet potato and blue cheese. These are two of my favorite flavors, but I never thought to put them together until I saw them on the menu. I ordered the quiche — it was amazing — and left with determination to use this flavor combination in a dish of my own soon. My spin on the Flour Bakery quiche is a sweet potato blue cheese frittata — full recipe below:
