There’s a chill in the autumn air and I am welcoming soup season with big open arms! I was digging into my recipe archives to pull out my favorite soup recipes to start making on the weekends, and thought I’d share a round up of 9 popular soups that I come back to year after year (plus my fool-proof recipe for homemade chicken stock!). Cheddar Thyme Potato Leek Soup. I have been dreaming about making this soup after feeling the first chill of fall in the air. It’s indulgent, hearty, rich, creamy, and so satisfying — full of potatoes and cheddar, leeks and fresh thyme. It’s a soup that feels like a meal on it’s own, but tastes amazing with warm, soft pretzels for dipping too. One of favorite fall soup recipes!
Sausage and Tortellini Soup. This soup recipe was adapted and made it into my cookbook! In my humble opinion, you really can’t go wrong with anything that involves tortellini. I like to use hot sausage in the dish to give it a little kick, but sweet sausage works too if you’re not a fan of spice.My favorite way to serve is is alongside a tray of warm, fresh popovers and herb butter.
