One of my all-time favorite summer treats is an ice cold creamsicle pop! My friends at Fancypants Baking Comake an Orange Burst cookie that has all those citrus-y orange and sweet vanilla notes of that classic, nostalgic summer treat. Recently after taking my first bite into the Orange Burst cookie, I got a spark of inspiration for combining the cookies and the creamsicles into an over-the-top sundae that tastes like warm sunny days of my childhood!To assemble the sundae, I started with a big scoop of vanilla bean ice cream. Don’t skimp on good vanilla ice cream, those little black vanilla bean flecks are my favorite part! Then I tucked in an ice cold creamsicle popsicle to the ice cream, alongside the Orange Burst cookies. Put out some colorful sprinkles to top it off – I add a few for color but leave a scoop on the side for eager kids that want to finish it off with even more sprinkles.
