I have a mental arsenal of our weeknight dinner recipes; they’re so engrained in my head I never think to actually write them down. My friends at Peapod asked me if I had any easy recipes that I’m leaning on as a new mom with a busy schedule, and I knew just the one to share. It’s a quick and easy turkey burger, packed with flavor from BBQ sauce, spicy hot sauce, and chopped up scallions.

- 1 lb of Ground Turkey
- ¼ Cup of BBQ Sauce
- 1 Tbsp of hot sauce
- 3 Cup of chopped Scallions, plus more for garnish
- ⅓ Cup of panko bread crumbs
- 2 garlic cloves, minced
- Salt and Pepper
- Blue Cheese crumbles
- Boston Lettuce
- Shredded Carrots
- For dipping sauce:
- 8 oz of Sour Cream
- ⅓ Cup of blue cheese crumbles
- 2 Tbsp of apple cider vinegar
- Ground Pepper
- Coat a non-stick pan with cooking spray and heat to medium-high heat.
- Combine ground turkey, BBQ sauce, hot sauce, scallions, breadcrumbs and garlic in a bowl and mold the mixture into four burger patties.
- Season the burgers with salt and pepper, and place them in the pan to cook.
- While burgers are cooking, prepare the dipping sauce by combining sour cream, blue cheese crumbles, apple cider vinegar, and fresh ground pepper into a bowl. Keep refrigerated.
- Cook burgers until internal temperature is 165 degrees, about 15 minutes.
- Glaze burgers with a drop of BBQ sauce during the last few minutes of cooking.
- Serve burgers on a bed of lettuce and shredded carrots, top with more crumbled blue cheese, scallions, and dipping sauce.
