The weather is warm, my garden is bursting, and with our summer-at-home in full swing it’s the perfect time for some al fresco grilling recipes! Grilled chicken is just about as classic as it comes for a summery dish and this version is drizzled with a riff on green goddess dressing that is packed with seasonal flavors. My friends at Weber shared their Weber Connect Smart Grilling Hub with me and I got to test it out on this recipe. It has a variety of cook programs for different selections of meat that take you through the prep stage through taking it off the grill. It takes the guesswork out of the grilling part, and leaves the seasoning, sides, and sauces up to me (my favorite part!)Here’s a few things I like about the Weber Connect Hub & App: to start, it takes you through a few simple prep steps for your meal and one of the first things it asks is to check your fuel levels on your grill. I can’t tell you how many times I’ve started grilling, only to realize after 20 minutes that my dinner didn’t cook at all because I ran out of propane! The food readiness countdown and estimated cook time are also really helpful to gauge how much time I have to prep side dishes, set the table, and usually tend to toddler requests like “where is my iPad” and “can I have a snack.” My mind is always going in a million different directions, so little reminders like this are so helpful even for a seasoned cook like me!Another thing I really like about the Weber Connect smart grilling hub are the multiple probe points. For this recipe I was grilling multiple pieces of chicken that were all different sizes, one of them was done after about 9 minutes and the second piece was gigantic and took closer to 15 minutes. Being able to use different probes in each size ensured even cooking, and everyone gets the perfect piece of grilled chicken! The multiple probes are also great when we’re multi-tasking on the grill, like doing food prep for the week with a full chicken on one side and grilled chicken breasts on the other half. I used the Weber Connect smart grilling hub to cook my grilled chicken perfectly for this recipe, starting with a light seasoning of salt and pepper and a drizzle of olive oil. While the chicken cooked I made an herb-packed take on green goddess dressing. In a small food processor, combine the tasty basil, dill, parsley and chives (picked from my garden!) with capers, pesto, Greek yogurt and sour cream. I added a squeeze of fresh lemon juice at the end and served the dish with some extra lemon slices too. It was so deliciously fresh, seasonal, and perfect for a warm summer day on the patio. Grilled Green Goddess Chicken.
 
Ingredients
  • 3-4 Large Chicken Breasts
  • Salt and Pepper
  • Olive Oil
  • 1 Tbsp of Fresh Basil
  • 1 Tbsp of Fresh Dill
  • 1 Tbsp of Fresh Parsley
  • 1 Tbsp of Fresh Chives
  • 1 Tsp of Capers
  • 3 Tbsp of Pesto
  • ¼ cup of Greek Yogurt
  • ¼ cup of Sour Cream
  • 1 Tbsp of Fresh Lemon Juice
  • Additional herbs and lemon slices for garnishing
Instructions
  1. Pat chicken dry, drizzle with olive oil, and season with salt and pepper. Cook chicken on the grill until the internal temperature reaches 165 degrees; set aside to rest.
  2. While chicken is cooking, prepare the green goddess sauce. In a small food processor, combine fresh basil, dill, parsley, chives and capers with pesto, Greek yogurt and sour cream. Stir in lemon juice and season to taste with salt and pepper. Chill until ready to serve.
  3. Top the grilled chicken with green goddess dressing, and garnish with lemon wedges and more fresh herbs before serving.
