If there’s one thing I know about food blogging, it’s that you all go wild for any recipe that involves Trader Joe’s Cauliflower Gnocchi! Make it a one-dish sheet pan meal that can be on the table in just about 30 minutes, and that’s it, people go nuts. I’ve been brainstorming some quick meals during this busy time of year that get a little helping hand from Trader Joe’s frozen food aisle. Want to know the secret to the famous Trader Joe’s Cauliflower Gnocchi? Ignore the instructions on the back of the bag and bake them in the oven instead! They get a nice crispy, browned texture and the baking brings out more of the nutty cauliflower flavor too. This recipe has a nice seasonal fall feel, with bits of Italian sausage (I used sweet sausage to make it kid friendly, but mix it up if you have another kind you prefer), wilty green spinach and hearty white beans. Bits of garlic and red pepper flakes (totally optional if you don’t like spice) give the dish a punch of flavor too. Trader Joe's Cauliflower Gnocchi with Sausage, Spinach and White Beans.

Ingredients
  • 1 Bag Of Trader Joe's Frozen Cauliflower Gnocchi
  • 2-3 Italian Sausage Links, removed from casing and broken into small pieces
  • 3-4 Garlic Cloves, peeled
  • 1 Shallot, thinly sliced
  • ½ Tsp of Garlic Powder
  • ½ Tsp of Onion Powder
  • 2 Cups of Fresh Spinach, roughly chopped
  • ¾ Cup of White Beans, rinsed
  • Olive Oil
  • Salt And Pepper
  • Parmesan Cheese, for serving, optional
Instructions
  1. Preheat oven to 425 degrees.
  2. On a rimmed quarter baking sheet, combined frozen cauliflower gnocchi, pieces of sausage removed from casing, garlic cloves, and shallots . Drizzle ingredients with olive oil and season with garlic powder, onion powder, and salt and pepper.
  3. Roast in the oven for about 30 minutes, tossing all of the ingredients with a large spatula 1-2 times to ensure even cooking.
  4. During the last 5 minutes of cooking, add spinach and white beans and red pepper flakes to the sheet pan and finish cooking until spinach begins to wilt.
  5. Remove from oven and toss to combine everything on the sheet pan. Garnish with parmesan cheese and an additional drizzle of olive oil if desired, serve immediately.
