I’m excited to be partnering with BUBBA burger on a tasty burger recipe series this summer (check out the other posts here!) and we’re continuing our collaboration today with a super easy, and exceptionally fast summer dinner idea: Grilled Cheeseburger Pizza!I’m all about quick dinners in the summer, after a long day of work and camp and if we’re lucky some beach time, everyone is tired, and we need a meal on the table asap! I turn to the grill so much in the summer for quick meal prep, and a giant bonus if I get to be outside in the cool evening breeze instead of hanging over my stove in a hot kitchen. We always keep some BUBBA burgers on hand in the freezer for quick grilled dinners and I got a lightbulb of inspiration recently to turn the classic grilled cheeseburger into a delightfully delicious cheeseburger pizza for Friday pizza night – made with all the classic cheeseburger toppings!BUBBA burger makes it super convenient to get this dinner on the table fast, from freezer to grill or skillet, they’re ready in about 10 minutes and they come in a variety of options to fit everyone’s food needs – beef, turkey, and even plant-based veggie burgers! I love using my pizza oven to make pizzas, but since I already have the grill on to make quick work of the burgers, I built this recipe so you can make the whole thing on the grill. I start by making the special sauce, combine ketchup, mayo Dijon mustard, pickle juice and the spices into a bowl and mix until it’s well incorporated. Set it in the fridge to chill until you’re ready to serve it. Next, get the grill started and cook your BUBBA burgers. While they’re cooking, you can prep the rest of the toppings – cheddar cheese, lettuce, tomato, onion, and pickles!Once the burgers are cooked, chop them up and add them to your pizza dough and top with cheddar cheese. Add the pizza to the grill and cook until the cheese is melted, and the dough is at your desired doneness, then finish it off with fresh toppings – lettuce, tomato, onion, pickles, and a drizzle of the special sauce!
